Certified organic farming

Vinification

A careful sorting of the harvest is carried out when the grapes are picked and received.

Skin maceration for a few hours in an inert atmosphere before pressing.

Gentle pneumatic pressing with selection of the first juices.

Thermo-regulated fermentation between 14 and 16°C, followed by Malolactic fermentation for half of our vats.

Aging in oak barrels of a few vats until bottling.
